Turkey Empanadas with Quinoa Chicken Soup

One of my favorite dinner on cold days. Turkey Empanadas (Empanaditas de Pavo) and Quinoa Soup ( Sopita de Quinoa). Easy and delicious!!

Let's begin with the Quinoa Soup ( 40 minutes preparation time)
Chopped onion and Garlic about medium size onion and 3 cloves of garlic.
In a large pot add one table spoon of olive oil, add garlic and 1 full table spoon of cumin. Cook it for 3 minutes in high.

Add the chicken breast cut it in cubes. Add salt, pepper, oregano and parsley.

I had some of our garden zucchini and yellow banana squash that I froze. Add the 3 large potatoes ( red potatoes will be great too) zucchini and yellow banana squash. Add 1/2 cup of cooking wine.

8 cups of water with 2 tablespoon of chicken bouillon or you can also add 4 cans of chicken stock.

Add one cup of the delicious Quinoa and let it cook for 30 minutes or more.

Que rico!! Love to see my kids eating this yummy sopita without knowing how healthy is eating this miracle Quinoa.

Empanadas de Pavo or Turkey Empanadas (preparation time 45 minutes to 1 hour)

We need ground turkey, 3 tablespoon of (aji colorado paste the recipe is in my previous recipe for empanadas de carne) chopped 1 large onion, 3 cloves of garlic, 1 teaspoon of cumin, oregano and salt and pepper.

Ground Turkey
Comino or Cumin

Perejil, comino y oregano or Parsley, cumin and Oregano
I already add the Aji Colorado, onion and Garlic. Add chopped garlic and onion. Cook for about 5 to 7 minutes.

Filling the empanadas (got some frozen tapas from the Latin American Store) you can make the tapas. The recipe for the tapas are in my blog under Empanadas de Carne.
Love to close this beautiful Empanaditas in a different way than using a fork.
brush the empanadas with 2 eggs yolk.
